With an initial investment between $3,000-$4,000-covering essentials like a $450 immersion blender and large cooking pots-Kirby crafted his first batches by hand-squeezing lemons rather of investing in costly machinery.

This hands-on approach extended beyond production; balancing academics with entrepreneurship meant scheduling morning classes so afternoons could be devoted entirely to making product and selling at weekend markets.

“I became obsessed with sales-constantly calculating how many jars I could sell each day,” Kirby explains. “It was exhausting but thrilling becuase I was creating something that belonged solely to me.”

Cultivating Growth Through Strategic Focus

Following graduation, Kirby collaborated with co-packers to boost production capacity while carefully expanding distribution across Upstate new York grocery stores and restaurants. The fresh nature of hummus limited rapid scaling but encouraged deep market penetration rather than spreading resources too thin geographically.

This deliberate strategy yielded strong results: focusing on fewer locations led to higher sales velocity and stronger customer connections. As an example, partnering closely with five Wegmans stores provided valuable insights compared to attempting-and failing-to manage dozens concurrently.

The brand’s rising popularity soon outpaced its supply capabilities; major retailers such as Target, Walmart, Costco, and Kroger showed early interest but were declined as Ithaca Hummus prioritized quality over quantity during its formative years.

Ithaca Hummus now features ten distinct flavors available through more than 8,000 retailers across the United States-a remarkable journey from humble beginnings at local farmers markets just over ten years ago. Lifetime sales have surpassed $150 million amid steadily growing demand year after year.

This year alone is projected to generate revenue exceeding $50 million-with each 10-ounce container retailing near $7-reflecting both premium positioning within the competitive hummus market and also strong consumer loyalty built on authenticity and locally sourced ingredients whenever possible.

“Our goal is clear: become number one in our category,” says Kirby. “By making thoughtful daily decisions focused on our customers’ needs rather than chasing trends or shortcuts-we believe lasting success is achievable.”
